Dry Roasted Edamame…Yum!

I’ve just found a new favorite snack, lightly salted Dry Roasted Edamame!
Most of you are probably used to seeing edamame cooked if you like to eat Asian food, but this is a new twist on an old favorite. It’s a little crunchy, a little salty, a little nutty, and packs lots of protein! We tried some made by Seapoint Farms and loved them.
They have a great nutrition profile: ¼ cup = 130 calories, 4 g fat, 14 g protein, 8 g fiber (wow!), and only 150 mg sodium.
After our nutrition staff had a taste, we came up with lots of ways we want to use this food!
- As a snack instead of nuts or chips
- A quick snack when you’re on the run and there’s no time to stop
- As a topping for salads
- Add to Greek yogurt along with a little garlic
- Great snack for those who can’t have nuts
- Use to make homemade trail mix (with some dried fruit and crunchy pretzels or cereal)
- Sprinkle on your favorite soup for a little crunch
- Add to a stir fry in place of peanuts
- Use to replace cocktail peanuts when having company
